Made this quick and delicious jackfruit and potato curry. The recipe will be up this week— I was reminded on here and by other sources that I’m not getting enough protein. And of course, I was like “whatevs” because that’s what every vegan hears, but then I thought about it and was like— except for eating out, I could maybe use a lil’ more protein 😁 That being said, the recipe will include chickpeas to make this a nice complete protein meal. Horrible pics because I was starving and didn’t even think I would post this meal, but I tried some food from @goodhealthcafenyc . They’re vegan options are a bit pricier — likely because they’re on the Upper East Side, but at least they **have them**. And this meal was on the cheaper side of the options also. I emphasize them having the options because this is N O T a vegan restaurant! They sell dishes with chicken, fish and turkey and it’s meant to be a healthy place to eat. They don’t sell red meat or pork— and they have a decent amount of vegetarian and vegan options ✨🌱✨ and that’s always great for when vegans are, well, anywhere and need a place where we can get F O O D that’s not 🍟 or a 🥗. I had the « veggie club » which was BBQ tofu, vegan bacon, lettuce, tomato and vegan mayo on some yummy, grain bread. It came with chips and salsa 💃🏾 They also have a whole vegan dessert menu with about 4 or 5 desserts. Rice with broccoli in sweet and spicy garlic sauce. I wasn’t going to originally, but I think I’m going to post the recipe for this sauce because it’s just **that** good. I’ve made it about 3 times (in very small batch quantities) and each time it got better and better, and that’s one of the best parts about making a recipe is seeing it evolve into something more amazing than the last time. I’m having a really fun weekend— nothing to do with Easter per say, but just able to be in an out-of-the-ordinary place that I’ll likely never be in again ✨✌🏾🤗✨ Gotta appreciate and seize those fun and amazing opportunities! My mom gifted me a bag of Klondike potatoes and they’ve been part of most of my meals over this past week. I love small potatoes because they’re easy to work with and they’re also just really cute. Not to mention, these babies came in a few varieties and the colors are so frickin beautiful— once I put them in this grey bowl (pre eating them all, of course)my heart melted at the color palate 🖤🖤🖤 anyway, I hope everyone has an amazing holiday weekend! This meal was such a throwback to all the plating I used to do in my early vegan days— if you scroll toward the beginning of this page, you’ll see 😊🍛 I wanted something sweet but it was dinner so I decided I wanted to make some BBQ jackfruit and sweet potato fries— and I was going to have it with a side of broccoli because I always add a veg. But then, I saw I had a TJ’s sauce that’s been in the fridge since forever (it’s actually pass the expiration date now but of course, it’s still good like most “expired” food). So, I made the fries and decided to mix the broc and jackfruit and make a sweet and spicy sauce! The base is TJ’s Sesame Soy Ginger Vinaigrette— to that I added some brown sugar, soy sauce, sriracha and a little bit of yellow mustard. It turned out amazing and I tossed the sautéed jackfruit and broc in the sauce and drizzled the extra on the fries ‘cause duh. 😁🍟 If you want the sauce recipe, DM me! (yes, I did record my measurements 🤪) Also, does anyone else find frozen jackfruit to be sweeter than fresh? I’ve made a few recipes with it already, but this is my first time using frozen jackfruit. It’s also from @thejackfruitco if that makes a difference? I don’t mind it at all but I can tell I probably wouldn’t use it for everything bc of the sweeter flavor. Any opinions? Finally tried @spicymoonnyc this weekend and it did not disappoint! Pictured here is the Kung Pao tofu — crispy tofu pieces tossed in sweet and sour sauce along with a bunch of veggies, peppers and onion and served with white rice (or brown rice). You can also do Kung Pao veggies🤤🤤 I’m not gonna lie— vegan Chinese food is really up there for me— like really, really up there.
